  1. Begin by gently brushing the mushrooms with a soft-bristled brush or a clean, damp cloth to remove any dirt or debris that may be clinging to them.

  1. If necessary, you can also rinse the mushrooms briefly under cool running water, but be sure to do so quickly to avoid saturating them with water.

  1. Pat the mushrooms dry with a clean towel or paper towel to remove any excess moisture.

  1. Remove the tail by cutting it with a knife, and if the mushroom is big break them by hand into 1-2 inch small pieces; You can also cut them on cutting board.

Cooking:

  1. Heat half the butter and chopped garlic in a pan placed over a medium flame. Once hot enough add elm oyster mushrooms into the pan. After about 3 minutes, remove from the heat and keep it aside. Do not overcook the mushroom.

  1. Take a bowl, break the eggs and beat them. Add in cream, salt, pepper, red chilli flakes and chopped parsley.

  1. Place a pan over medium flame and add the remaining butter. While the butter melts, swirl the pan to evenly spread it all over the surface. 4. Then, pour in the egg mixture and tilt the pan so that it spreads evenly.

  1. When the egg appears to have almost set, put sautéed mushrooms along with mozzarella, cheddar, baby spinach leaves, and jalapenos. Once the egg is fully set fold the omelette in half and let the cheese melt.

  1. Serve with buttered bread slices
