Preparation:

  1. Begin by gently brushing the mushrooms with a soft-bristled brush or a clean, damp cloth to remove any dirt or debris that may be clinging to them.

  1. Since Superlicious Mushrooms are cultivated in a very clean environment washing is not required.

  1. Pat the mushrooms dry with a clean towel or paper towel to remove any excess moisture.

  1. Remove the stem by cutting it with a knife, place the top half of the mushroom on a cutting board and cut into ½ inch thick pieces.

  1. Other than black pearl & king oyster, most of the oyster mushroom stems are hard to cook & they are recommended to be discarded.

  1. Cooking:

  1. Combine butter, milk, and cream in a pan, mixing thoroughly until the butter melts. Then, add the mashed boiled potatoes.

  1. Add salt, chicken powder, garlic powder, black pepper powder, white pepper powder, and parsley. Mix thoroughly and cook for 2-3 minutes & set aside.

  1. Heat oil in a pan over medium heat, then add mushrooms. Sauté for 3-5 minutes or until they are soft.

  1. Add the butter and wait for it to melt.

  1. Then, add the flour and all the seasonings and whisk for 1 minute. Let the roux cook for 2-3 minutes until golden and the flour gives out an aroma.

  1. Add the water and soy sauce, bringing the mixture to a boil.

  1. Then, reduce the heat to a simmer and simmer for 5 minutes or so, or until the mixture has thickened into gravy. Add more salt and pepper to taste.

  1. For plating, start by creating a bed of mashed potatoes on the serving dish. Then, generously ladle the mushroom gravy over the mashed potatoes.

  1. Finally, garnish with fresh parsley leaves for added flavor and presentation.

  1. Safety Instructions:

  1. Always use sharp knife, when you use a dull knife to cut, you need to apply more force. As a result, the knife is more likely to slip and this increases the risk of injury.

  1. To prevent contamination, it is important to clean your knife as soon as you’re done using it. Leaving your knife on your cutting board or in a sink full of soapy water clutters your kitchen and creates opportunities for contamination and injury.

  1. Always use a cutting board when cutting ingredients. This will allow you to cut consistently and protect your work surface in the process.

  1. Never leave your stove unattended while cooking. Stay in the kitchen while you're frying, grilling, boiling, or broiling food. If you have to leave the room—even for just a moment—turn off the stove.

  1. Keep cooking equipment clean. Crumbs in a toaster, built-up grease on the stovetop, and excess dust behind your appliances are fire hazards.
