Chef's Recommendation:

  • You can use different oyster mushrooms for slightly different taste & texture. For a deeper umami taste use Phoenix oyster mushroom & for meaty texture use Elm or black pearl oysters. Keep in mid these mushrooms can be used together as well to give you the best of both worlds.

  1. Begin by gently brushing the mushrooms with a soft-bristled brush or a clean, damp cloth to remove any dirt or debris that may be clinging to them.

  1. Since Superlicious Mushrooms are cultivated in a very clean environment washing is not required.

  1. Pat the mushrooms dry with a clean towel or paper towel to remove any excess moisture.

  1. Remove the stem by cutting it with a knife, place the top half of the mushroom on a cutting board and cut into ½ inch thick pieces.

  1. Other than black pearl & king oyster, most of the oyster mushrooms stems are hard to cook & they are recommended to be discarded.

  1. Heat butter and chopped garlic in a pan over medium flame.

  1. Add grey oyster mushrooms once the mixture is hot, After approximately 3 minutes, remove from heat

  1. Season with salt and pepper to taste, Ensure not to overcook the mushrooms; retain their desired texture.

  1. Prepare the dressing by blending mayonnaise, lemon juice, vinegar, garlic, salt, mustard paste, black pepper, grated Parmesan cheese, water, and fish sauce until smooth.

  1. Store the dressing in the refrigerator; it has a shelf life of 2 weeks.

  1. Cut the bread slices into small squares.

  1. Heat 1 tbsp of butter in a pan, swirling to coat the surface evenly. Toast the bread pieces over low heat until crisp, season with salt, and your croutons are ready.

  1. Create Parmesan croutons by melting 20g of Parmesan cheese in a pan, letting it settle off the heat, and then crushing it. These can be used as a delightful topping for salads.

  1. Begin by cleansing and rinsing the iceberg leaves, breaking them by hand to prevent browning and avoiding the use of a knife.

  1. Toss the iceberg leaves with your preferred dressing, using approximately ½ cup for every 200g of leaves.

  1. Complete the salad by topping it with a delightful combination of grey oyster mushrooms, olives, tomatoes, croutons, and Parmesan cheese croutons.

Safety Instructions:

  1. Always use sharp knife, when you use a dull knife to cut, you need to apply more force. As a result, the knife is more likely to slip and this increases the risk of injury.

  1. In order to prevent contamination, it is important to clean your knife as soon as you’re done using it. Leaving your knife on your cutting board or in a sink full of soapy water clutters your kitchen and creates opportunities for contamination and injury.

  1. Always use a cutting board when cutting ingredients. This will allow you to cut consistently and protect your work surface in the process.

  1. Never leave your stove unattended while cooking. Stay in the kitchen while you're frying, grilling, boiling or broiling food. If you have to leave the room—even for just a moment—turn off the stove.

  1. Keep cooking equipment clean. Crumbs in a toaster, built-up grease on the stovetop, and excess dust behind your appliances are fire hazards.
