The Earthy Mushroom!

Like most oyster mushrooms the grey oyster mushroom also has a wide fan-shaped light grey (or brown) coloured cap with an intense dark border. Growing sideways and in clusters, they tend to have a short & stubby stem.

Flavour & Texture

Grey oyster mushrooms have a mild, savory star-anise flavor. The subtle flavor is far removed from the strong earthiness of most mushrooms. They tend to take on a tender & unique velvety texture when cooked.

True to its categorization as a superfood, the grey oyster mushroom has many health benefits as it is a rich source of protein, vitamins, minerals, fiber and antioxidants. Their high fiber & low calorie content means that they Packed with beta-glucans & antioxidants they are excellent for building the body’s immunity, by limiting the build-up of toxic free radicals. This property also makes them a potentially anti-carcinogenic mushroom. In aiding immunity, they also facilitate the body’s anti-aging process. It is also a source of selenium, which helps protect the cells from damage and helps strengthen the immune system. Like most oyster mushrooms they also serve as probiotics, by having a positive impact on the gut microbe population and keeping the digestive tract healthy. Preparation

If there is any dirt on the grey oyster mushroom, you may wipe it gently with a damp towel

It is not recommended that you wash them in running water, since they’re quite porous & spongy and will absorb the water  

You can separate the individual grey mushroom caps from the root using a knife.

The caps can be further chopped into smaller pieces using a knife. You may use the mushrooms whole, sliced, or simply torn into appropriately sized pieces.

How Best to Cook

The grey oyster mushroom will take 4-5 minutes to cook and take on a rich umami flavor. 

Details to note when cooking

Cooking methods like frying, roasting, and grilling can retain more texture in the mushrooms while braising and sautéing makes them softer.
