Lion’s Mane, alternatively called bearded tooth fungus or pom pom is a large, white shaggy mushroom that resembles a lion’s mane as it grows. This mushroom can be enjoyed cooked, dried, or steeped as a tea, and has an absorbent, soft, spongy texture. The flavor is highly desired by chefs and has been described as seafood-like, often compared to crab or lobster. Lion’s Mane contains bioactive compounds that have beneficial effects on the body. White Enoki
White Enoki

Enoki  is wonderfully adaptable with a fabulous, forest aroma and a light, crunchy texture. In the wild, maitake can grow into huge heads over a foot in diameter. The other common name for this variety is Hen-of-the-Woods.
